Salón Gourmets 2027 regulations for building a free-design stand at IFEMA
The organiser’s Salón Gourmets internal regulations take precedence over IFEMA’s where they differ. These are the four figures that shape the stand design most.

| Height | 4 m for walls and 6 m in peripheral locations. Logos and rotating elements may reach 5 m. In the connection area between halls the maximum is 4 m, and everything needs the organiser’s approval. source |
| Compulsory construction | The stand includes at least the carpet or platform and the walls, without using those of neighbouring stands. The back faces of panels get a quality finish, with no ornament. source |
